Cacao Sampaka from Barcelona comes a surprise favorite. Their single origin La Joya bar uses some mythic Criollo beans. It is epic. However, we love them at least as much for their inclusion bars created by Albert Adria, who together with his brother Ferran opened what became the world's top rated restaurant, El Bulli. They are the father's of the molecular gastronomy movement and this is no secret when you taste bars like the Gin & Tonic.
