DECEMBER 8th

Focused Tasting: World Classic Cheese & Wine Pairings

Some will tell you that there are no rules when pairing cheese & wine or to just pair whatever wine you like with whatever cheese you like. While that is the easy way out, we will provide some simple rules of thumb to help you increase your pairing ability. Also, taste some tried and true matches. Absolute world classic pairings such as Epoisses w/ White Burgundy, Valencay w/ a Loire Valley Sauvignon Blanc or Stilton w/ Port have to be tried to be believed. Cheeses: $25   Wine: $15

Focused Tasting: Intro to Fine Chocolate

Chocolate is the most misunderstood category in food. Learn why the VAST majority of chocolate does not even taste like cacao (the plant it is made of). This class will boggle your mind and turn even the biggest skeptics into chocophiles. You will learn the basics and become able to navigate your way among the sea of chocolate out there.  Class: $25

Focused Tasting: Olive Oil & Balsamic

Forget everything you know, this class is guaranteed to redefine both olive oil and balsamic vinegar for you. If you have been to Matt's chocolate classes & came away changed, you won't want to miss this one. Class: $25

Focused Tasting: Intro to Fine Chocolate

Focused Tasting: Soft Ripened Cheeses & Wine

This class separates “the men from the boys.” Prepare yourself for fully ripened goodness. Carefully coordinating purchasing & affinage for peak flavor, Matt will explain why you might not have liked stinky cheese in the past, but should if it is PROPERLY aged. It is also interesting to note how much more the wines “pop” when the cheese is fully ripe.  Class: $25  Wine: $15

 

FEBRUARY 9th

FEBRUARY 16th

Focused Tasting: Mountain & Alpine Style Cheeses & Wine Pairing

Taste your way through the high mountain areas of Southern Europe. From the Italian & French Alps to Galicia, Spain, and back over to the mountains of Epirus, Greece and many things in between. The flavors of fresh spring and summer grass are incredibly persistent. Enough to transport you to another time and place with one bite. Class:  $25  Wine Pairing:  $15

 

FEBRUARY 23rd

Cooking Class: Pasta: Traditional Recipes from Rome

Join us for a night of Roman comfort food including Bucatini Amatriciana and Rigatoni Carbonara.  Tony or Matt will prepare the Roman style gnocchi that will knock your socks off.  Pairings include crisp whites and big reds to match this hearty fare.  Class includes a full meal.  Class:  $45  Wine Pairing:  $15

MARCH 10th

Focused Tasting: Intermediate Chocolate

In the Intro we focused on bean type & terroir as the major contributors to flavor. In this class, we will demonstrate how the first class was oversimplified.  We will taste and discuss chocolates of similar origin from artisans with dramatically different styles to better understand how each step in production affects the finished flavor. MUST TAKE INTRO CLASS 1ST!!! Class: $20

 

MARCH 17th

Focused Tasting: Matt's Intro to Fine Cheese

In the Intro to cheese, Matt brings the same intensity and passion to cheese that made his chocolate classes famous. You will learn that what makes one cheese better than another is not simply a matter of opinion. Everything from the strains of Lactic Acid Bacteria to what the animals eat produces different flavors in the finished cheese. Cheese: $25  Wine: $15

 

MARCH 23rd

Focused Tasting: Olive Oil & Artisan Vinegars

Forget everything you think you know about EVOO & Balsamic Vinegar. Did you know Extra Virgin standards are not enforced in the U.S.? After this class you will not need to rely on anything but your own taste to select the right product for each specific use (cooking, salads, condiments, etc.). Class: $25

 

APRIL 20th

Focused Tasting World Classic Beer & Cheese Pairing

Find out why the pairing fine cheeses and great beers is all the rage.  With our selection of farmstead cheeses and an array of world classic beers, we can give wine sommeliers a run for their money. Matt will demonstrate how some cheeses simply go better with beer than wine. Think sweet aged Gruyere w/ a smokey stout or the surprise winner from last time, a classic Brie with Pilsner Urquell. You will be sorry if you miss this one. Class: $25 Beer: $20

 

APRIL 27th

Cooking Class: Quick & Healthy Mediterranean Meals

The Spanish region of Andalusia, the island of Crete in Greece and the island of Sardinia in Italy, have perfected healthy and simple culinary traditions. We will explore each area through fresh, flavorful and easy to prepare recipes.  Class: $45 Wine: $15
