The Rosso family, makers of Juni, have been producing cheese near Biella in Piedmont, Italy, since the 19th century. Juni is a natural rind, raw cow's milk with the addition of locally harvested mountain juniper berries to the curd which is then aged for two months.  Look for its crumbly, stark white interior dotted with fragrant juniper berries.  Pair with medium intensity red wines.
