Our Parmigiano Reggiano 5 year aged is considerably more sharp than our Parmigiano Reggiano 2 year or 3 year aged (link on both of the others?). Most wheels peak in flavor quality at 2 year, but master cheese ageing professionals in Parma can occasionally find a wheel that will benefit from extra aging.
By the time this cheese reaches 5 years of age it gains a distinctively acidic note of pineapple in its flavor. It also becomes dramatically darker in appearance with an almost roasted earthy flavor which is lovely with its increased fruitiness. It is amazing grated on top of roasted veggies, especially zucchini!
