But a cheese cave? People often wonder why we have one. And we tell them: “affinage,” or the art of ripening cheese, is vital for flavor, texture, and the overall “wow” factor that happens when you taste a perfectly-aged triple crème or aged cheddar.
The cheese cave is only one of a handful in the country and it acts like a nursery for cheese from the around world, coddling them in temperature and humidity controlled paradise where they can get back into peak shape, no matter if they’re journey started in Italy or Uintah, Utah.

We love meat. So it’s no coincidence that when we came across the likes of talented chef Frody Volgger whose love of meat rivals ours, that a butcher shop would be born.
Volgger hails from the northern Alto-Adige region of Italy where Germanic and Italian cultures influence the food and it usually hinges around great fresh cuts of meat and cured and smoked meat products.
We offer fresh cuts of meat expertly butchered by Volgger himself as well as frozen cuts. We source ONLY pasture-raised (i.e. free range) heritage breeds of cow, pig, lamb, and more from local microranches. These guys not only cherish their animals, but they also cherish the land they use.
Great meat is the cornerstone to any good salami and sausage. Volgger’s cured and smoked creations are mouthwatering and irresistible – just ask our crew. They’re happy to not only give you a sample, but sing praises about Volgger’s talent and dedication to creating meltingly good Speck, Jagdwurst, and an amazing like of fresh sausage (pork and lamb) using all local animals.
